I am a coeliac chef, originally training in 2014, after a career in accountancy.
In 2015 I set up a small home restaurant called Knife & Fork that was 100% gluten free. Initially I did not serve bread at Knife & Fork. My personal philosophy towards food is that I will not eat something just because it is gluten free. However, I have persevered and have finally produced a number of nutritionally dense gluten-free breads that I am very proud of and Knife & Fork Bakery is the result. Anyone who follows a gluten free diet, whether coeliac or not, should be able to enjoy good quality tasty bread made traditionally with no added gums, additives or chemicals.
